LET’S MAKE IT

Step by step

  1. 01

Pat the chicken thighs dry with paper towels and season evenly on all sides with 1 teaspoon of salt and 1 tablespoon of dried oregano.

  2. 02

Heat 2 tablespoons of extra virgin olive oil in a heavy skillet or braising pan over medium-high heat. Place the chicken thighs skin-side down and sear for 6 to 8 minutes until golden brown, then flip and brown for 2 minutes before transferring to a plate.

  3. 03

Add the remaining 1 tablespoon of olive oil and the potato wedges to the pan, turning to lightly crisp the edges for about 4 minutes.

  4. 04

Stir in the minced garlic and cook for 30 seconds until fragrant without burning.

  5. 05

Whisk together the chicken stock, lemon juice, remaining 0.5 teaspoon of salt, and remaining 0.5 tablespoon of dried oregano, then pour the mixture into the skillet to deglaze the bottom.

  6. 06

Nestle the seared chicken back into the skillet on top of the potatoes, lower heat to medium-low, cover, and simmer for 25 minutes until the potatoes are fork-tender and chicken reaches an internal temperature of 165 degrees Fahrenheit.

A LITTLE KITCHEN KNOW-HOW

Pan Braising

Browning protein high-heat first to build depth of flavor, then cooking it gently partially submerged in seasoned liquid.

Notes from the kitchen

  • Pouring liquid around the chicken rather than over it keeps the skin crisp while the potatoes soak up the lemon broth.
  • Use Yukon Gold potatoes because their buttery texture holds up well during braising.
  • Original home-cooking adaptation inspired by Greek; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
