LET’S MAKE IT

Step by step

  1. 01

Heat butter in a wide pan over medium heat, add diced yellow onion and ground turmeric, and sauté for 6 minutes until soft and translucent.

  2. 02

Season chicken thighs lightly with salt and pepper, add them to the pan, and sear for 4 minutes on each side until lightly golden.

  3. 03

Pour in the fresh orange juice and steeped saffron water, then stir in the ground cardamom.

  4. 04

Bring the liquid to a gentle boil, cover the pan with a lid, and turn heat to low to simmer for 30 minutes until chicken is tender.

  5. 05

While the chicken simmers, place slivered almonds in a small dry skillet over medium heat and toast for 2 minutes until fragrant and lightly golden.

  6. 06

Uncover the braising pan, spoon the citrus reduction over the chicken, top with toasted almonds, and serve hot over long-grain rice.

A LITTLE KITCHEN KNOW-HOW

Citrus Braising

Simmering meat gently in fruit juice and aromatic spices to tenderize the protein while developing a complex glazed sauce.

Notes from the kitchen

  • Use freshly squeezed orange juice for the best sweet-tart flavor balance.
  • Watch the almonds carefully when dry-toasting as they can burn in seconds.
  • Original home-cooking adaptation inspired by Iranian; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
