A LITTLE KITCHEN KNOW-HOW
Deep Caramelization
Slowly cooking onions in oil until natural sugars break down into deep brown savory-sweet flavors.
Notes from the kitchen
- Take time caramelizing onions to a deep brown color, as this provides the rich color and sweet flavor to the rice.
- Pat fish fillets completely dry with paper towels before seasoning to ensure a crisp sear.
- Original home-cooking adaptation inspired by Lebanese; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
