Lebanese Spiced Beef Kafta Skillet With Tomatoes

LET’S MAKE IT

Step by step

  1. 01

Place grated onion in a clean paper towel and squeeze out excess moisture. Combine ground beef, drained onion, minced parsley, seven spice blend, and 1 teaspoon of sea salt in a large bowl.

  2. 02

Mix meat mixture thoroughly by hand for 2 minutes until sticky and uniform. Divide into 8 equal portions and shape into flattened oblong patties about half-inch thick.

  3. 03

Heat 1 tablespoon of olive oil in a wide oven-safe skillet over medium-high heat. Sear beef kafta patties for 2 minutes per side to develop color; remove and set aside.

  4. 04

Arrange potato slices in an overlapping single layer across the bottom of the skillet. Lay tomato slices over potatoes, then arrange seared kafta patties on top.

  5. 05

Whisk tomato paste, warm water, remaining 1 tablespoon of olive oil, and a pinch of salt together until blended. Pour evenly over patties and vegetables.

  6. 06

Cover skillet tightly with a lid or foil. Simmer over medium-low heat for 20 minutes, then remove cover and simmer 5 additional minutes until potatoes are soft and tomato sauce is reduced.

A LITTLE KITCHEN KNOW-HOW

Layered Pan-Baking

Cooking meat over raw vegetable slices in a covered skillet, allowing seasoned juices to steam and soften the underlying vegetables.

Notes from the kitchen

  • Draining liquid from grated onions is essential to prevent kafta patties from breaking apart during searing.
  • Make quick homemade Lebanese seven spice by combining equal parts ground black pepper, allspice, cinnamon, clove, nutmeg, ginger, and coriander.
  • Original home-cooking adaptation inspired by Lebanese; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
