LET’S MAKE IT

Step by step

  1. 01

Drain soaked honey beans and transfer to a medium stockpot with halal vegetable stock.

  2. 02

Bring to a boil over medium-high heat, cover, and simmer for 35 minutes until beans are soft.

  3. 03

Heat red palm oil in a separate skillet over medium heat for 2 minutes until hot and fragrant.

  4. 04

Add diced red onion and minced scotch bonnet pepper to the oil, sautéing for 6 minutes until sweet and translucent.

  5. 05

Pour the fried onion mixture, sweet corn, ground crayfish, and fine salt into the simmering bean pot.

  6. 06

Stir well, lower heat, and cook uncovered for 15 minutes, mashing a few beans against the side of the pot to thicken into a rich porridge.

A LITTLE KITCHEN KNOW-HOW

Starch Thickening

Crushing cooked legumes directly into their cooking liquid to create a natural creaminess without flour.

Notes from the kitchen

  • Bleaching palm oil is unnecessary; heating gently preserves its natural buttery aroma without creating harsh smoke.
  • Black-eyed peas work as an accessible alternative if honey beans are hard to source.
  • Original home-cooking adaptation inspired by Nigerian; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
