LET’S MAKE IT
Step by step
- 01
Combine ground beef, grated onion, fresh parsley, ground allspice, 1/2 teaspoon salt, and 1/4 teaspoon black pepper in a bowl; mix thoroughly and form into 8 oval patties.
- 02
Heat olive oil in a large skillet over medium-high heat and sear kofta patties for 2 minutes per side until lightly browned on the outside. Transfer patties to a baking dish.
- 03
In the same skillet, brown the potato slices in remaining pan drippings for 3 minutes per side, then arrange them around the kofta patties in the baking dish.
- 04
Whisk sesame tahini, lemon juice, minced garlic, 3/4 cup warm water, and a pinch of salt in a bowl until smooth and pourable.
- 05
Pour the tahini sauce evenly over the arranged kofta patties and potato slices in the baking dish.
- 06
Bake at 200°C (400°F) for 25 minutes until the potatoes are fork-tender and the tahini sauce is bubbling and golden around the edges.
A LITTLE KITCHEN KNOW-HOW
Emulsified Tahini Baking
Baking seared meats inside an acidic sesame emulsion to create a rich gravy without dairy.
Notes from the kitchen
- Adding warm water to tahini while whisking prevents it from seizing and yields a creamy gravy texture.
- Original home-cooking adaptation inspired by Palestinian; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
