LET’S MAKE IT
Step by step
- 01
Season beef chuck cubes evenly with salt and black pepper. Heat vegetable oil in a large Dutch oven over medium-high heat.
- 02
Sear the beef cubes in batches until nicely browned on all sides, taking about 6 minutes per batch, then transfer to a plate.
- 03
Add chopped onions to the remaining oil in the pot and cook over medium heat for 5 minutes until softened and light golden brown.
- 04
Stir in caraway seeds, ground allspice, browned beef, and low-sodium halal beef broth, using a wooden spoon to scrape up browned bits from the bottom.
- 05
Cover the pot, reduce heat to low, and simmer for 40 minutes. Add halved dried plums and cook uncovered for another 10 minutes until the meat is tender.
- 06
Remove the pot from heat, stir in sour cream until smooth and incorporated, then serve warm with boiled potatoes or rye bread.
A LITTLE KITCHEN KNOW-HOW
Simmering with Dried Fruit
Adding dried plums during the final stage of braising allows them to soften and release sweet accents into the savory meat gravy.
Notes from the kitchen
- Do not boil the stew after stirring in sour cream to prevent the sauce from curdling.
- For extra depth, toast caraway seeds in a dry pan for one minute before adding them to the stew.
- Original home-cooking adaptation inspired by Polish; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
