LET’S MAKE IT

Step by step

  1. 01

Heat olive oil in a heavy Dutch oven or stew pot over medium-high heat. Season beef short rib chunks with salt and pepper, then sear in batches for 5-6 minutes until brown on all sides. Transfer beef to a plate.

  2. 02

Add diced onion to the pot and sauté for 4-5 minutes until soft and translucent. Stir in minced garlic, sweet paprika, and ground cumin, cooking for 1 minute until fragrant.

  3. 03

Return the seared beef to the pot, then pour in halal beef broth. Add bay leaves and two orange slices directly into the pot.

  4. 04

Bring liquid to a gentle boil, reduce heat to low, cover tightly with a lid, and simmer for 30 minutes until beef is tender.

  5. 05

Uncover the pot and stir in the rinsed black beans. Simmer uncovered for an additional 15 minutes, stirring occasionally, until the sauce thickens slightly and beans absorb the savory flavors.

  6. 06

Remove orange slices and bay leaves before serving. Serve hot over steamed white rice, garnished with fresh orange slices on the side.

A LITTLE KITCHEN KNOW-HOW

Low and Slow Braising

Simmering tough cuts of meat in a tightly covered pot with liquid and aromatics over low heat to melt collagen into rich, gelatinous tenderness.

Notes from the kitchen

  • Simmering orange slices in the stew cuts through the richness of the beef short ribs with subtle citrus fragrance.
  • Mash half a cup of black beans against the side of the pot during the final minutes to thicken the broth naturally.
  • Original home-cooking adaptation inspired by Portuguese; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
