LET’S MAKE IT

Step by step

  1. 01

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the potato cubes in a single layer and cook for 10 to 12 minutes, turning occasionally, until crisp and golden brown. Transfer potatoes to a paper towel-lined plate and season with 1/4 teaspoon salt.

  2. 02

Season the cubed beef sirloin evenly with 1/2 teaspoon salt and sweet paprika.

  3. 03

Add the remaining 1 tablespoon of olive oil to the same skillet over high heat. Add the beef cubes in a single layer and sear without moving for 2 minutes until deeply browned. Flip and cook for another 2 minutes.

  4. 04

Reduce heat to medium, stir in the minced garlic, and cook for 1 minute until fragrant without letting the garlic burn.

  5. 05

Pour in the white vinegar and halal beef broth, scraping up any browned bits stuck to the bottom of the pan. Simmer for 2 minutes until the liquid reduces by half.

  6. 06

Return the golden potatoes to the skillet, toss gently to coat everything in the garlic paprika sauce, and remove from heat. Sprinkle with chopped fresh coriander before serving.

A LITTLE KITCHEN KNOW-HOW

Pan-Searing and Deglazing

Searing beef quickly over high heat to build a caramelized crust, then using liquid to lift the flavorful browned bits from the pan into a pan sauce.

Notes from the kitchen

  • Dry the potato cubes thoroughly with paper towels before frying to ensure maximum crispness.
  • Avoid overcrowding the skillet when searing the beef so it browns nicely instead of steaming.
  • Original home-cooking adaptation inspired by Portuguese; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
