LET’S MAKE IT

Step by step

  1. 01

Heat 1 tablespoon of olive oil in a large soup pot over medium heat. Add the sliced smoked beef sausage and cook for 4 to 5 minutes until browned. Transfer sausage rounds to a plate.

  2. 02

In the same pot, add the remaining 1 tablespoon of olive oil along with the diced onion and garlic. Cook for 5 minutes until soft and translucent.

  3. 03

Add the thinly sliced potatoes, sea salt, and halal beef stock to the pot. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer for 15 minutes until potatoes are very tender.

  4. 04

Use a potato masher directly in the pot to crush about half of the potatoes, creating a naturally thickened rustic broth.

  5. 05

Stir the shredded kale and browned sausage into the simmering broth. Cook uncovered for 5 to 7 minutes until the kale is tender yet brightly colored.

  6. 06

Ladle the warm stew into soup bowls and drizzle each serving with a tiny touch of olive oil.

A LITTLE KITCHEN KNOW-HOW

Potato Thickening

Simmering thinly sliced potatoes until tender, then mashing a portion directly in the broth to create a velvety texture naturally.

Notes from the kitchen

  • Slice the kale as thinly as possible into fine ribbons so it cooks quickly and blends smoothly into the soup.
  • Mashing some of the potatoes gives the soup body without needing heavy cream or flour starches.
  • Original home-cooking adaptation inspired by Portuguese; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
