LET’S MAKE IT
Step by step
- 01
Season red snapper fillets on both sides with half of the sea salt.
- 02
In a small saucepan over low heat, combine full-fat coconut cream, finely diced sweet onion, fresh lime juice, sliced red chili, and remaining sea salt.
- 03
Warm coconut miti sauce for 5 minutes stirring gently until onion softens slightly without boiling sauce.
- 04
Heat olive oil in a non-stick pan over medium-high heat until hot.
- 05
Place snapper fillets into the hot pan and sear for 3 to 4 minutes on the first side until golden and crisp.
- 06
Flip fillets carefully and sear for another 2 to 3 minutes until fish flakes easily with a fork.
- 07
Ladle warm coconut miti sauce onto plates, arrange seared snapper fillets on top, and garnish with chopped fresh cilantro.
A LITTLE KITCHEN KNOW-HOW
Pan Searing
Cooking fish rapidly in hot fat to form a caramelized outer crust while preserving delicate internal texture.
Notes from the kitchen
- Keep coconut miti sauce on very low heat so coconut cream stays silky smooth and does not break or separate.
- Press fish fillets down gently with a spatula when first placing in pan to ensure complete contact for crisping.
- Original home-cooking adaptation inspired by Samoan; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
