LET’S MAKE IT

Step by step

  1. 01

Preheat the oven to 400 degrees Fahrenheit (204 degrees Celsius).

  2. 02

Melt butter in a large oven-safe skillet over medium heat, then add onion and carrots, cooking for 6 minutes until softened.

  3. 03

Whisk in all-purpose flour and cook for 1 minute until smooth and lightly toasted.

  4. 04

Gradually pour in halal chicken broth and heavy cream, stirring continuously until the sauce thickens and begins to simmer gently.

  5. 05

Fold in shredded halal chicken and frozen green peas, then remove the skillet from heat.

  6. 06

Mix buttermilk biscuit mix and buttermilk in a small bowl until a soft dough forms.

  7. 07

Drop spoon-sized mounds of biscuit dough evenly across the top of the chicken filling in the skillet.

  8. 08

Bake for 18 to 20 minutes until the biscuit tops are golden brown and fully baked.

A LITTLE KITCHEN KNOW-HOW

Drop Biscuit Top Baking

Baking soft biscuit dough directly on top of a hot stew to cook steam-raised tops.

Notes from the kitchen

  • Use an oven-safe skillet like cast iron so you can transition directly from stovetop to oven.
  • Do not overmix the biscuit dough to keep the cooked tops tender and airy.
  • Original home-cooking adaptation inspired by American Southern; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
