LET’S MAKE IT

Step by step

  1. 01

Season turkey chops generously with salt, black pepper, and garlic powder, then light dredge in 30 grams of flour, shaking off excess.

  2. 02

Heat vegetable oil in a large skillet over medium-high heat and sear turkey chops for 3 to 4 minutes per side until golden; remove and set aside on a plate.

  3. 03

Reduce heat to medium, add sliced yellow onions to the same skillet, and cook for 10 minutes until golden brown and soft.

  4. 04

Add minced garlic and cook for 1 minute, then sprinkle the remaining 30 grams of flour over onions, stirring for 2 minutes to cook out raw flour flavor.

  5. 05

Slowly whisk in the halal chicken broth and fresh thyme, stirring constantly as gravy thickens and reaches a gentle simmer.

  6. 06

Return turkey chops and any accumulated juices to the pan, submerge them in gravy, cover, and simmer on low for 15 minutes until tender.

A LITTLE KITCHEN KNOW-HOW

Smothering

A Southern technique of pan-searing meat and then braising it low and slow inside a covered skillet of flavored pan gravy.

Notes from the kitchen

  • Dredging meat in flour creates a golden crust and helps thicken the smothering pan gravy later.
  • Caramelizing the onions slowly builds the deep brown color and natural sweetness of classic Southern gravy.
  • Original home-cooking adaptation inspired by American Southern; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
