LET’S MAKE IT
Step by step
- 01
In a shallow glass container, combine grated fresh turmeric, minced garlic, halal fish sauce, sea salt, and black pepper.
- 02
Pat the fish fillets completely dry with paper towels, then rub them thoroughly with the turmeric garlic marinade. Rest for 15 minutes.
- 03
Lightly dust the marinated fish fillets with rice flour, shaking off any excess coating.
- 04
Heat 0.5 cup of vegetable oil in a large wide skillet over medium-high heat until shimmering.
- 05
Add fish fillets carefully into the hot oil; fry for 3 to 4 minutes per side until skin is golden brown and meat flakes easily.
- 06
Remove fish and drain on paper towels; strain crispy fried garlic bit remnants from pan oil and scatter them over the fish to serve.
A LITTLE KITCHEN KNOW-HOW
Shallow Pan-Crisping
Frying flour-dusted proteins in moderate oil amounts creates a protective crispy crust without fully submerging delicate fish.
Notes from the kitchen
- Freshly grated turmeric root provides vastly superior color and earthy aroma compared to dried turmeric powder.
- Dusting lightly with rice flour prevents sticking and produces a thin crispy crust that retains juices.
- Original home-cooking adaptation inspired by Thai; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
