LET’S MAKE IT
Step by step
- 01
Crack the eggs into a large mixing bowl, add the ground chicken, halal fish sauce, lime juice, cornstarch slurry, and scallions.
- 02
Vigorously whisk the egg mixture with a fork for 2 minutes until aerated, foamy, and the minced chicken is evenly distributed.
- 03
Heat 1 cup of vegetable oil in a small, deep wok or small deep skillet over high heat until smoking hot (around 180C / 350F).
- 04
Pour the egg mixture from about 12 inches above the pan in a steady stream directly into the hot oil; it should puff up instantly.
- 05
Cook for 1 to 2 minutes until the bottom is deeply golden and crispy, then carefully flip using two spatulas and cook the other side for another 1 minute.
- 06
Drain the omelette on a wire rack or paper towels for 30 seconds before serving hot with jasmine rice and sriracha.
A LITTLE KITCHEN KNOW-HOW
High-Heat Thai Deep-Frying
Frying eggs in plenty of extremely hot oil instantly inflates air pockets, yielding crisp brown edges and a light souffle-like texture.
Notes from the kitchen
- Pouring the egg mixture from high above aerates the batter as it hits the oil, creating signature airy layers.
- Lime juice and cornstarch prevent the egg protein from drying out, keeping the center tender.
- Original home-cooking adaptation inspired by Thai; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
