Thai Steamed Lime And Garlic Fish Fillets

LET’S MAKE IT

Step by step

  1. 01

Arrange the fish fillets in a heatproof dish that fits inside your steamer basket.

  2. 02

Set up a steamer with boiling water over medium-high heat. Place the dish with fish inside, cover, and steam for 7 to 9 minutes until opaque and easily flaked with a fork.

  3. 03

While fish is steaming, stir together chopped garlic, red chilies, fresh lime juice, halal fish sauce, brown sugar, and warm chicken broth in a bowl until sugar dissolves.

  4. 04

Carefully remove heatproof dish from steamer using heat-resistant gloves.

  5. 05

Pour off excess liquid released by the steamed fish, then pour the garlic-lime chili dressing evenly over hot fillets.

  6. 06

Garnish generously with chopped fresh cilantro and serve warm with steamed jasmine rice.

A LITTLE KITCHEN KNOW-HOW

Steam Infusion Sauce Dressing

Pouring a raw spicy-acidic dressing over hot, freshly steamed fish allows the heat to slightly soften raw garlic and chilies without destroying lime juice freshness.

Notes from the kitchen

  • Pouring off excess steaming liquid keeps the lime dressing punchy and un-diluted.
  • Use fresh lime juice rather than bottled juice to achieve authentic bright acidity.
  • Original home-cooking adaptation inspired by Thai-inspired; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
