A LITTLE KITCHEN KNOW-HOW

Geera Spice Blooming

Toasting roasted ground cumin directly in hot oil with aromatics to awaken oil-soluble spice compounds before adding liquids.

Notes from the kitchen

  • For authentic depth, roast whole cumin seeds in a dry pan until dark brown before grinding them into geera powder.
  • Ensure sweet potatoes are cut into uniform pieces so they cook evenly alongside the chicken.
  • Original home-cooking adaptation inspired by Trinidadian; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
