LET’S MAKE IT
Step by step
- 01
Roast eggplants directly over an open gas flame or under a hot broiler for 15 minutes, turning frequently until skins are charred and flesh collapses.
- 02
Scoop charred eggplant flesh into a bowl, discarding skins, and mash coarsely with diced tomatoes and half of the minced garlic.
- 03
Heat 1 tablespoon of vegetable oil in a skillet over medium heat and brown ground beef with green seasoning for 7 minutes until cooked through.
- 04
Transfer mashed eggplant choka onto a broad serving dish and layer the browned ground beef neatly over the top.
- 05
In a small pan, heat remaining 2 tablespoons of oil with remaining garlic, Scotch bonnet, and roasted cumin for 2 minutes until garlic turns light golden.
- 06
Carefully pour the sizzling spiced garlic oil directly over the beef and eggplant layer immediately before serving.
A LITTLE KITCHEN KNOW-HOW
Chunkaying
Sizzling garlic and spices in hot oil at high heat to bloom aromatics right before tempering a vegetable dish.
Notes from the kitchen
- Make small slits in the eggplant skin before roasting to prevent steam building up and bursting.
- Roasted cumin (geera) gives the signature Trinidadian smoky aroma; toast whole cumin seeds in a dry pan before grinding for best results.
- Original home-cooking adaptation inspired by Trinidadian; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
