A LITTLE KITCHEN KNOW-HOW
Dry Geera Glazing
Coasting seared protein with heavily toasted ground cumin at high heat to create a flavorful, smoky spice crust.
Notes from the kitchen
- Toast whole cumin seeds in a dry pan until dark brown before grinding for authentic nutty Trini geera flavor.
- High heat ensures beef sears rapidly without steaming in its own juices.
- Original home-cooking adaptation inspired by Trinidadian; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
