LET’S MAKE IT

Step by step

  1. 01

Pat salmon fillets completely dry with paper towels and sprinkle both sides evenly with salt and black pepper.

  2. 02

Whisk seedless passion fruit pulp, honey, lime juice, and minced garlic together in a small bowl until combined.

  3. 03

Heat olive oil in a wide stainless steel or non-stick skillet over medium-high heat.

  4. 04

Place salmon fillets skin-side down into the skillet and sear undisturbed for 4 to 5 minutes until skin is crisp and golden.

  5. 05

Carefully flip salmon fillets, reduce heat to medium, and melt butter into the pan.

  6. 06

Pour in passion fruit mixture and spoon simmering glaze over salmon for 3 to 4 minutes until fish is cooked through and sauce is glossy; garnish with fresh cilantro.

A LITTLE KITCHEN KNOW-HOW

Fruit-Glaze Arrosé

Pan-basting seared fish fillets with a simmering sweet-acidic fruit pan sauce to glaze the protein while keeping the interior moist.

Notes from the kitchen

  • Use frozen passion fruit pulp thawed at room temperature if fresh fruit is unavailable.
  • Spoon the glaze continuously over the fish during the last minutes to build a shiny, rich lacquer.
  • Original home-cooking adaptation inspired by Brazilian; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
