LET’S MAKE IT
Step by step
- 01
Pat the halal beef sirloin steaks dry with paper towels and season both sides evenly with ground cumin, salt, and black pepper.
- 02
Heat olive oil in a heavy cast-iron skillet over medium-high heat until very hot and shimmering.
- 03
Place steaks in the skillet and sear undisturbed for 3 to 4 minutes per side to develop a golden crust, then transfer to a plate to rest.
- 04
Reduce skillet heat to medium, add butter and sliced red onion, and sauté for 3 minutes until onions turn soft and translucent.
- 05
Add minced garlic, seedless passion fruit pulp, and honey, stirring continuously to scrape up browned bits from the pan bottom.
- 06
Simmer glaze for 2 minutes until glossy, return steaks and accumulated pan juices to skillet, coat generously with glaze, and serve hot.
A LITTLE KITCHEN KNOW-HOW
Pan Deglazing
Pouring fruit juice or liquid into a hot skillet to loosen caramelized browned protein bits from the bottom, incorporating them into a glossy glaze.
Notes from the kitchen
- If seedless passion fruit pulp is unavailable, strain fresh passion fruit juice through a mesh sieve.
- Resting steaks before re-coating ensures juicy, tender results.
- Original home-cooking adaptation inspired by Colombian; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
