Egyptian Garlic Tasha Braised Okra With Stewed Tomatoes

LET’S MAKE IT

Step by step

  1. 01

Heat 1 tablespoon of olive oil in a medium saucepan over medium heat, add diced onion, and saute until soft and translucent, about 5 minutes.

  2. 02

Stir in crushed tomatoes, vegetable stock, ground cumin, and 1 tablespoon of lemon juice, bringing the liquid to a steady simmer.

  3. 03

Add trimmed okra pieces into the stew, lower heat to medium-low, cover, and cook until tender, about 15 minutes.

  4. 04

Heat remaining 2 tablespoons of olive oil in a small skillet over medium heat for the tasha topping.

  5. 05

Add minced garlic and ground coriander to the skillet, stirring constantly for 1 to 2 minutes until garlic turns pale golden and aromatic.

  6. 06

Pour the hot garlic coriander oil directly into the simmering okra stew, stir in remaining lemon juice, and serve warm.

A LITTLE KITCHEN KNOW-HOW

Tasha Sizzling Bloom

A classic Egyptian finishing step where garlic and coriander are bloomed in hot oil and poured sizzling into cooked stews for maximum aroma.

Notes from the kitchen

  • Keep fresh okra intact at stem tip when trimming to prevent releasing excess mucilage during simmering.
  • Monitor garlic closely while making tasha to avoid burning spices, which can make the finished stew bitter.
  • Original home-cooking adaptation inspired by Egyptian; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
