LET’S MAKE IT
Step by step
- 01
Heat 1 tbsp olive oil in a pot over medium-high heat and sear beef cubes for 5 minutes until browned.
- 02
Add seven spice blend and 3 cups of water to the pot, reduce heat to low, cover, and simmer for 30 minutes until beef is tender.
- 03
Stir in tomato paste and drained white beans, bringing the stew back to a gentle simmer for 10 minutes.
- 04
In a small skillet, heat remaining 1 tbsp olive oil over medium heat and saute minced garlic for 1 minute until fragrant.
- 05
Remove skillet from heat immediately and stir dried mint into the hot garlic oil to bloom the herb.
- 06
Pour the fried garlic and mint oil over the bubbling stew, season with salt to taste, and serve hot with steamed rice.
A LITTLE KITCHEN KNOW-HOW
Tarka Sizzling
Sizzling herbs and garlic briefly in warm oil to extract aromatic oils before stirring into stews.
Notes from the kitchen
- Do not let garlic brown too dark in the final step to avoid bitterness.
- Canned beans save time, but rinse them thoroughly to remove excess sodium.
- Original home-cooking adaptation inspired by Lebanese; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
