LET’S MAKE IT

Step by step

  1. 01

Heat the vegetable oil in a large Dutch oven over medium-high heat.

  2. 02

Add the sliced halal smoked beef sausage and cook for 4 to 5 minutes until browned and rendered, then remove with a slotted spoon.

  3. 03

Add the diced onion and celery to the pot and saute for 4 minutes until softened and translucent.

  4. 04

Add the diced chicken thighs and Cajun seasoning, cooking for 5 minutes until the chicken is lightly seared on the outside.

  5. 05

Return the sausage to the pot, stir in the rinsed long-grain white rice, and pour in the halal chicken broth.

  6. 06

Bring the liquid to a rolling boil, reduce heat to low, cover tightly with a lid, and simmer for 20 minutes without stirring.

  7. 07

Remove from heat and let stand covered for 5 minutes, then gently fluff with a fork and serve hot.

A LITTLE KITCHEN KNOW-HOW

Absorption Rice Cooking

Simmering grain and meats together under a tight seal allows rice to absorb aromatic stock and fat evenly.

Notes from the kitchen

  • A true Lowcountry bog is meant to be slightly moist and soft rather than dry like a traditional pilaf.
  • Rinsing the rice beforehand removes excess surface starch and prevents the bog from turning gummy.
  • Original home-cooking adaptation inspired by American Southern; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
