LET’S MAKE IT

Step by step

  1. 01

Heat vegetable oil in a heavy Dutch oven over medium-high heat.

  2. 02

Season beef cubes with salt and sear in batches until browned on all sides, about 6 minutes, then transfer to a plate.

  3. 03

Add chopped onion to the pot and cook for 4 minutes until softened and translucent.

  4. 04

Stir in minced ginger, garlic, and whole cloves, cooking for 1 minute until fragrant.

  5. 05

Add diced tomatoes and scrape up any browned bits stuck to the bottom of the pot.

  6. 06

Return beef to the pot, pour in beef broth, and bring to a simmer.

  7. 07

Cover, lower heat to medium-low, and simmer gently for 40 minutes until beef is tender.

A LITTLE KITCHEN KNOW-HOW

Low and Slow Braising

Searing meat at high heat then gently simmering it covered in liquid to dissolve tough collagen into tender meat.

Notes from the kitchen

  • Keep cloves whole so they can be easily scooped out before serving if preferred.
  • Serve over hot steamed jasmine rice or mashed cassava to soak up the spiced pan gravy.
  • Original home-cooking adaptation inspired by Madagascan; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
