LET’S MAKE IT
Step by step
- 01
Combine beef chuck cubes, minced garlic, grated ginger, ground turmeric, sea salt, and water in a heavy-bottomed pot over medium-high heat.
- 02
Bring the liquid to a boil, then reduce heat to low, cover tightly with a lid, and simmer gently for 40 minutes until beef is completely tender.
- 03
Remove cover and turn heat to medium-high to boil off remaining liquid completely.
- 04
Shred warm beef chuck directly in the pot using two forks into thin, fibrous strands.
- 05
Drizzle vegetable oil over shredded beef and fry over medium-high heat for 8 minutes, stirring frequently, until edges are golden brown and crispy.
- 06
Transfer to a serving dish, top with sliced scallions, and serve warm alongside steamed white rice.
A LITTLE KITCHEN KNOW-HOW
Braise-and-Crisp Shredding
A two-stage cooking method where meat is simmered until tender, pulled apart into strands, and flash-fried to create crisp contrast.
Notes from the kitchen
- Ensure cooking liquid completely evaporates before adding vegetable oil to avoid hot oil splatter.
- Using beef chuck with light fat marbling keeps the shredded strands tender inside while achieving crispiness outside.
- Original home-cooking adaptation inspired by Madagascan; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
