LET’S MAKE IT
Step by step
- 01
In a small mortar or bowl, mash the minced red chilies, grated ginger, crushed garlic, ground turmeric, lemon juice, 1 tablespoon of vegetable oil, and salt together to form a wet Sakay paste.
- 02
Rub three-quarters of the Sakay paste evenly over all sides of the lamb chops, reserving the rest for serving.
- 03
Let the seasoned lamb chops marinate at room temperature for 15 minutes.
- 04
Heat the remaining tablespoon of vegetable oil in a large cast-iron skillet over medium-high heat.
- 05
Add the lamb chops to the skillet in a single layer and sear for 4 to 5 minutes on the first side until deeply browned.
- 06
Turn the chops over and sear for an additional 3 to 4 minutes for medium-rare cookery, then rest on a warm plate for 5 minutes before serving with the reserved chili paste.
A LITTLE KITCHEN KNOW-HOW
Pan Sear and Rest
Direct high-heat cooking to caramelize meat surfaces quickly followed by a rest period to lock in internal moisture.
Notes from the kitchen
- Adjust the number of red chilies to control the heat level of the fresh Sakay paste.
- Resting the lamb chops allows the juices to redistribute, keeping the meat tender and moist.
- Original home-cooking adaptation inspired by Madagascan; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
