LET’S MAKE IT
Step by step
- 01
Heat vegetable oil in a deep saucepan over medium-high heat.
- 02
Add chicken thigh pieces, sprinkle with half the salt, and sear for 5 minutes until lightly browned, then transfer to a plate.
- 03
Add the chopped yellow onion, garlic, and minced ginger to the same pot and cook for 4 minutes until translucent.
- 04
Stir in the chopped ripe tomatoes and cook for 5 minutes until they break down into a thick sauce.
- 05
Return the seared chicken pieces to the pot along with the drained navy beans and halal chicken broth.
- 06
Bring to a boil, cover with a lid, reduce heat to low, and simmer for 15 minutes until chicken is cooked through and sauce thickens.
A LITTLE KITCHEN KNOW-HOW
Legume Simmering
Cooking tender beans within a fragrant broth base to absorb aromatics and form a thick, cohesive gravy.
Notes from the kitchen
- Crush a small portion of the white beans against the pot wall near the end of cooking to naturally thicken the stew gravy.
- Use well-ripened tomatoes to achieve a rich reddish color and mild sweetness.
- Original home-cooking adaptation inspired by Madagascan; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
