LET’S MAKE IT

Step by step

  1. 01

Pat snapper fillets dry with paper towels and season skin and flesh sides lightly with salt.

  2. 02

Heat olive oil in a skillet over medium-high heat until hot and shimmering.

  3. 03

Place fillets skin-side down and cook for 4 minutes until skin is crispy, then flip and cook for 2 more minutes until opaque. Transfer fish to a plate.

  4. 04

In the same skillet over medium heat, add sliced shallots and garlic, stirring for 2 minutes until translucent.

  5. 05

Stir in crushed green peppercorns and coconut cream, bringing the mixture to a gentle simmer for 3 minutes until thickened.

  6. 06

Stir in lemon juice, season with salt to taste, and spoon warm peppercorn sauce over seared snapper fillets.

A LITTLE KITCHEN KNOW-HOW

Pan-Searing with Deglazing

Cooking proteins quickly at high temperature to develop crisp skin, then building a pan sauce from leftover browned drippings.

Notes from the kitchen

  • Crush green peppercorns gently with the back of a knife to release their floral heat without pulverizing them completely.
  • Ensure the skillet is thoroughly hot before adding fish to prevent skin from sticking.
  • Original home-cooking adaptation inspired by Madagascan; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
