LET’S MAKE IT

Step by step

  1. 01

In a mixing bowl, combine the peanut flour, ground ginger, cayenne pepper, smoked paprika, garlic powder, and salt to create the quick yaji spice mixture.

  2. 02

Toss the sliced beef strips in 2 teaspoons of vegetable oil, then dredge thoroughly in the spice mixture until evenly coated.

  3. 03

Heat 1 tablespoon of vegetable oil in a heavy cast-iron skillet over high heat until smoking hot.

  4. 04

Add the coated beef strips in a single layer and sear for 2 to 3 minutes without moving to develop a dark, aromatic crust. Flip and cook for another 1 minute, then transfer beef to a plate.

  5. 05

Add the remaining vegetable oil to the hot skillet, then toss in the sliced bell pepper and red onion. Fry for 2 to 3 minutes until softened yet crisp at the edges.

  6. 06

Return the seared beef to the skillet, stir well to combine with the vegetables for 1 minute until warmed through, and remove from heat immediately.

A LITTLE KITCHEN KNOW-HOW

Yaji Dry Crusting

Coating high-heat seared meats in ground roasted peanuts and dry spices to build a aromatic caramelized crust.

Notes from the kitchen

  • Do not crowd the skillet when searing the beef; cook in two batches if necessary to maintain high heat and prevent steaming.
  • Adjust cayenne quantity according to heat preference.
  • Original home-cooking adaptation inspired by Nigerian; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
