LET’S MAKE IT
Step by step
- 01
Pat snapper fillets dry with paper towels and season both sides evenly with ground turmeric, coriander, and salt.
- 02
Heat vegetable oil in a large non-stick skillet over medium-high heat until shimmeringly hot.
- 03
Place snapper fillets skin-side down in the skillet and sear for 4 minutes until crispy, then flip carefully and cook 2 minutes more.
- 04
Transfer seared fish fillets to a side plate and reduce skillet heat to medium.
- 05
Add sliced red onion, minced garlic, and diced serrano chile to the remaining pan oil and cook for 3 minutes until softened.
- 06
Pour coconut milk into the skillet, stirring to scrape up any browned bits from the pan bottom, and bring to a gentle simmer for 3 minutes until slightly thickened.
- 07
Stir fresh lime juice into the sauce, return the fish fillets to the pan for 1 minute to re-warm, and spoon sauce over top to serve.
A LITTLE KITCHEN KNOW-HOW
Pan-Searing Fish
Cooking fish quickly at high temperature to form a golden crust while keeping the interior juicy.
Notes from the kitchen
- Patting fish dry before searing ensures crisp skin and prevents steam buildup in the pan.
- Adjust heat levels by using half a serrano chile if a milder sauce is preferred.
- Original home-cooking adaptation inspired by Somali; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
