Somali Pan Seared Kingfish Fillets With Green Bisbas

LET’S MAKE IT

Step by step

  1. 01

Combine ground cumin, coriander, turmeric, and half the salt in a small bowl, then rub evenly over both sides of the fish fillets.

  2. 02

Prepare the green bisbas sauce by blending jalapeno peppers, cilantro, garlic, lemon juice, and remaining salt in a food processor until smooth.

  3. 03

Heat olive oil in a large nonstick skillet over medium-high heat until shimmering.

  4. 04

Carefully place fish fillets into the hot skillet and cook undisturbed for 4 minutes until a crisp spice crust forms.

  5. 05

Flip fillets gently with a spatula and cook for an additional 3 to 4 minutes until fish flakes easily with a fork.

  6. 06

Remove skillet from heat and spoon fresh green bisbas sauce over warm fish fillets right before serving.

A LITTLE KITCHEN KNOW-HOW

Bisbas Blending

Pureeing fresh green chiles, herbs, and lemon juice raw to create a vibrant, acid-forward condiment that cuts through rich seared fish.

Notes from the kitchen

  • Seed the jalapenos before blending if you prefer a milder sauce with less heat.
  • Make sure the pan is thoroughly heated before adding fish to ensure a golden, crispy spice crust without sticking.
  • Original home-cooking adaptation inspired by Somali; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
