Sprouted Kwati Bean And Garlic Stew

LET’S MAKE IT

Step by step

  1. 01

Rinse sprouted mixed legumes under cold water and drain thoroughly.

  2. 02

Heat one tablespoon mustard oil in a pot over medium heat and sauté half the garlic and all the ginger for one minute.

  3. 03

Stir in chopped tomato, turmeric, cumin, and one teaspoon salt; cook for three minutes until tomatoes break down.

  4. 04

Add sprouted beans and vegetable broth, bring to a boil, cover, and simmer on low heat for thirty minutes until beans are soft.

  5. 05

Heat remaining tablespoon of mustard oil in a small pan until very hot.

  6. 06

Add carom seeds and remaining sliced garlic to the hot oil; sizzle for thirty seconds until garlic turns golden brown.

  7. 07

Pour hot tempered oil and spices immediately into cooked bean stew and cover for two minutes to trap aromas.

  8. 08

Stir gently, divide into bowls, and garnish with chopped fresh cilantro.

A LITTLE KITCHEN KNOW-HOW

Tarka Tempering

Flash-frying spices and sliced aromatics in hot oil to unlock oil-soluble flavor compounds before pouring into a finished stew.

Notes from the kitchen

  • Using pre-sprouted legumes shortens cooking time significantly while improving texture and digestibility.
  • Pouring sizzling tarka into the stew while covered locks volatile herb oils directly into the liquid.
  • Original home-cooking adaptation inspired by Nepalese; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
