Bring stew to a boil, then reduce heat to low and mash one-quarter of beans with the back of a spoon to thicken sauce.

A LITTLE KITCHEN KNOW-HOW
partial bean mashing
Crushing cooked legumes into simmering broth to naturally thicken stews into rich gravy consistency.
Notes from the kitchen
- Crushing dried mint between your palms before adding to yogurt activates essential oils for better flavor.
- Crushing a fraction of cooked beans thickens sauce naturally without needing cornstarch.
- Original home-cooking adaptation inspired by Afghan; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
