LET’S MAKE IT
Step by step
- 01
Char the eggplant directly over an open stovetop flame (or roast under high oven broiler at 450°F / 230°C) for 15 to 20 minutes, turning regularly until skin is blackened and flesh is soft.
- 02
Transfer hot roasted eggplant to a bowl, cover tightly with foil for 10 minutes to steam, then peel off charred skin and discard stem.
- 03
Coarsely mash peeled eggplant flesh with a fork.
- 04
Heat mustard oil in a pan over medium heat until smoking lightly, then lower heat and add cumin seeds.
- 05
Add chopped onions, green chilies, and ginger-garlic paste. Cook for 6 minutes until onions turn translucent and light brown.
- 06
Add tomatoes and ground spices. Sauté for 4 to 5 minutes until tomatoes break down into a soft paste.
- 07
Stir in mashed eggplant flesh and salt. Cook uncovered over medium heat for 5 to 7 minutes, stirring continuously until well integrated.
- 08
Garnish with chopped fresh cilantro and serve hot with fresh tandoori rotis or flatbreads.
A LITTLE KITCHEN KNOW-HOW
Direct Open-Flame Roasting
Charring whole nightshades over flame to blister skin and infuse smoky aroma into tender interior flesh.
Notes from the kitchen
- Smoking mustard oil to its smoke point before cooking removes its harsh raw bite while leaving a rich pungency.
- Charring the skin till completely black gives the dish its signatures smoky dhaba flavor.
- Original home-cooking adaptation inspired by Indian Punjabi; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
