LET’S MAKE IT

Step by step

  1. 01

Heat one tablespoon of red palm oil in a large skillet over medium-high heat.

  2. 02

Add diced ripe plantains and cook for six minutes, turning occasionally until golden brown and tender, then set aside on a plate.

  3. 03

Add the remaining tablespoon of red palm oil to the skillet along with chopped red onion, ginger, and garlic, cooking for three minutes.

  4. 04

Stir in tomato paste, cayenne pepper, and salt, cooking for two minutes until aromatic and dark red.

  5. 05

Fold in the drained black-eyed peas and cooked plantains, stirring gently to coat without mashing plantains.

  6. 06

Cook for four additional minutes over medium heat until heated through, then remove from heat and serve warm.

A LITTLE KITCHEN KNOW-HOW

Plantain Caramelization Hash

Pan-frying diced ripe sweet fruit prior to tossing with spiced legumes for sweet-savory contrast.

Notes from the kitchen

  • Choose plantains with yellow skins marked by black spots for optimum sweetness and tender texture.
  • Use a nonstick or well-seasoned cast iron skillet to prevent sweet plantain cubes from sticking.
  • Original home-cooking adaptation inspired by Ghanaian; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
