LET’S MAKE IT

Step by step

  1. 01

Heat vegetable oil in a large heavy pot or Dutch oven over medium-high heat.

  2. 02

Season beef cubes with salt, then sear in batches until browned on all sides, about 6 to 8 minutes, and transfer to a plate.

  3. 03

Reduce heat to medium, add diced onion, garlic, and ginger, cooking for 4 minutes until softened and aromatic.

  4. 04

Stir in chopped tomatoes and cook for 3 minutes until softened and releasing juices.

  5. 05

Return browned beef and any accumulated juices to the pot, pour in beef broth, and bring to a simmer over low heat covered for 35 minutes until beef is tender.

  6. 06

Stir in chopped spinach and mustard greens, cook uncovered for 5 to 7 minutes until greens are wilted and tender, then serve hot over warm white rice.

A LITTLE KITCHEN KNOW-HOW

Gentle Simmer Greens Braising

Cooking fresh leafy greens during the final minutes of simmered braising allows them to absorb flavor while preserving bright green color and texture.

Notes from the kitchen

  • Sear the beef in small batches so the pan does not crowd, ensuring deep browning and flavor.
  • Mustard greens add a traditional peppery bite; feel free to adjust the ratio of spinach to mustard greens for mildness.
  • Original home-cooking adaptation inspired by Madagascan; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
