Moroccan Charmoula Braised Cod With Sweet Peppers

LET’S MAKE IT

Step by step

  1. 01

In a bowl, whisk together chopped cilantro, minced garlic, olive oil, ground cumin, sweet paprika, and lemon juice to make the charmoula marinade.

  2. 02

Coat the cod portions evenly with half of the charmoula marinade and set aside to marinate for 10 minutes.

  3. 03

Arrange the sliced red bell pepper rings and tomato discs in a single overlapping layer across the bottom of a wide skillet.

  4. 04

Pour the halal vegetable broth over the vegetable layer and set the skillet over medium heat until the broth starts bubbling.

  5. 05

Place the marinated cod fillets carefully on top of the vegetable bed and spoon the remaining charmoula over the fish.

  6. 06

Cover the skillet with a tight-fitting lid, lower the heat to medium-low, and simmer gently for 12 to 15 minutes until the fish flakes easily.

  7. 07

Remove from heat and serve warm with the tender braised vegetables and cooking pan juices.

A LITTLE KITCHEN KNOW-HOW

Charmoula Stacking Braise

Steaming delicate fish atop moist sliced aromatics to infuse citrus-herb flavors without scorching or breaking the fillet.

Notes from the kitchen

  • Do not stir the contents of the pan while simmering to ensure the cod portions remain intact above the soft vegetable base.
  • Fresh coriander leaves provide the most fragrant charmoula flavor base.
  • Original home-cooking adaptation inspired by Moroccan; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
