A LITTLE KITCHEN KNOW-HOW
Zaalouk Smashing
Partially mashing cooked eggplant into a spiced tomato base creates a velvety, thick textured ragout traditional to Moroccan home kitchens.
Notes from the kitchen
- Roasting eggplant beforehand prevents excess oil absorption and enhances natural caramelization.
- Serve hot alongside warm flatbread for scooping up the textured ragout.
- Original home-cooking adaptation inspired by Moroccan; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
