Moroccan Saffron Chicken Skillet With Sweet Carrots And Raisins

LET’S MAKE IT

Step by step

  1. 01

Pat chicken thighs dry with paper towels and season both sides evenly with salt and black pepper.

  2. 02

Heat olive oil in a deep skillet over medium-high heat and sear chicken skin-side down for 6 minutes until golden, then flip and cook for 3 minutes before transferring to a plate.

  3. 03

Add sliced yellow onion and carrot coins to the remaining skillet oil, sautéing over medium heat for 5 minutes until soft.

  4. 04

Stir in minced garlic, ground cumin, ground cinnamon, saffron threads, and golden raisins, cooking for 1 minute until fragrant.

  5. 05

Pour in chicken stock, stir to scrape up browned bits from the skillet bottom, and nestle the chicken thighs back into the pan.

  6. 06

Cover the skillet with a lid, reduce heat to low, and simmer gently for 20 minutes until chicken is tender.

  7. 07

Uncover and let broth simmer for 3 minutes to thicken slightly, then garnish with fresh parsley and serve hot.

A LITTLE KITCHEN KNOW-HOW

Tagine-style Layering

Building deep flavor by searing proteins first, sweating aromatics, and low-simmering under trapped steam to meld sweet and savory spices.

Notes from the kitchen

  • Steep saffron threads in two tablespoons of warm water for five minutes before adding to release maximum color and aroma.
  • Pair with steamed couscous or crusty semolina bread to absorb the rich simmered broth.
  • Original home-cooking adaptation inspired by Moroccan; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
