Moroccan Spiced Beef Shank With Caramelized Quince

LET’S MAKE IT

Step by step

  1. 01

Heat olive oil in a heavy pot over medium-high heat and brown the beef shank pieces for 3 minutes on each side, then transfer to a plate.

  2. 02

Add diced yellow onion to the pot and sauté over medium heat for 5 minutes until soft and light golden. Brabham.

  3. 03

Stir in ground cinnamon, ground ginger, and ground turmeric, cooking for 1 minute until fragrant.

  4. 04

Return browned beef to the pot, pour in halal beef broth, bring to a simmer, then cover tightly and reduce heat to low for 40 minutes.

  5. 05

In a separate small skillet, simmer quince wedges with honey and 2 tablespoons of water over medium heat for 10 minutes until golden and softened.

  6. 06

Gently transfer caramelized quince wedges and glaze into the beef pot and simmer uncovered for 10 minutes until beef is tender.

  7. 07

Serve hot with the sweet spiced sauce and translucent quince wedges.

A LITTLE KITCHEN KNOW-HOW

Separately Glazed Fruit Integration

Pre-cooking firm fruit with honey before combining with savory braises to maintain fruit structure while balancing savory stew notes.

Notes from the kitchen

  • If fresh quinces are unavailable, firm tart apples like Granny Smith make an excellent substitute.
  • Ensure the pot remains at a low simmer so the shank collagen melts into a velvety texture.
  • Original home-cooking adaptation inspired by Moroccan; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
