A LITTLE KITCHEN KNOW-HOW
Steam-Braking Tarkari
Initial stir-frying in spiced oil followed by low-water covered cooking to preserve texture and spice intensity.
Notes from the kitchen
- Cut the potatoes into uniform cubes so they cook through at the exact same rate as cauliflower.
- Trapping natural steam under the lid cooks the vegetables tenderly without turning them mushy.
- Original home-cooking adaptation inspired by Nepalese; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
