LET’S MAKE IT
Step by step
- 01
Mix ground peanuts, ground ginger, garlic powder, cayenne pepper, and salt in a shallow bowl to create the suya rub.
- 02
Pat the cod fillets thoroughly dry on all sides using clean paper towels.
- 03
Press each fillet firmly into the suya rub on both sides until completely and evenly coated.
- 04
Heat vegetable oil in a heavy large skillet over medium-high heat until shimmering.
- 05
Carefully place fillets in the hot skillet and cook undisturbed for 4 to 5 minutes until a deep golden crust forms.
- 06
Gently flip the fillets, scatter sliced red onions into the pan around the fish, and cook for another 3 to 4 minutes until the cod flakes easily with a fork.
A LITTLE KITCHEN KNOW-HOW
Nut-Crusting
Pressing dry spice and nut mixtures onto fish creates a protective outer crust that seals in moisture while frying.
Notes from the kitchen
- Ensure the cod is very dry before coating so the peanut spice rub adheres tightly during searing.
- Keep heat at medium-high so the peanuts toast into a crisp crust without burning.
- Original home-cooking adaptation inspired by Nigerian; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
