LET’S MAKE IT
Step by step

Heat mustard oil in a skillet over high heat until it just begins to smoke, then turn heat down to medium.
- 02
Add cumin seeds and asafoetida, letting them crackle for 30 seconds.
- 03
Add chopped green chilies and cubed potatoes; cook uncovered for 5 minutes, stirring frequently until edges start browning.
- 04
Sprinkle turmeric powder, red chili powder, and salt evenly over potatoes; mix well.
- 05
Cover skillet with lid and simmer on low heat for 8 minutes until potatoes become fork-tender.
- 06
Remove lid, add fresh chopped fenugreek leaves, and sauté uncovered over medium heat for 4-5 minutes until greens wilt and moisture dries up completely.
A LITTLE KITCHEN KNOW-HOW
Sukhi Sabzi (Dry Sautéing)
Cooking vegetables directly in seasoned oil with little to no added moisture for crisp texture and concentrated spice flavor.
Notes from the kitchen
- Drying fresh fenugreek leaves completely after washing prevents the sauté from becoming soggy.
- Original home-cooking adaptation inspired by Punjabi; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
