A LITTLE KITCHEN KNOW-HOW

Kaju Paste Emulsification

Using blended cashew puree as a thickening base for creamy vegetarian braises.

Notes from the kitchen

  • Salting and squeezing raw methi leaves tempers harsh bitterness while preserving fresh herbs.
  • Blend cashews into complete smoothness for a velvet restaurant-style gravy texture.
  • Original home-cooking adaptation inspired by Indian Punjabi; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
