LET’S MAKE IT
Step by step
- 01
Preheat oven to 400 degrees Fahrenheit and line a sheet pan with parchment paper.
- 02
Whisk olive oil, chopped cilantro, parsley, minced garlic, paprika, cumin, and lemon juice in a large bowl to form the charmoula sauce.
- 03
Toss cauliflower florets in two-thirds of the charmoula sauce until evenly coated.
- 04
Spread cauliflower across the prepared baking sheet and roast for 20 minutes until lightly browned at the edges.
- 05
Add white beans and remaining charmoula sauce to the baking sheet, stirring gently to combine.
- 06
Return to oven for 5 minutes until beans are thoroughly heated, then serve hot.
A LITTLE KITCHEN KNOW-HOW
High-Heat Herb Coating
Tossing dense vegetables in heavy herb and citrus oil mixtures prior to high-heat roasting caramelizes sugars while crisping herb solids.
Notes from the kitchen
- Dry the cauliflower completely after washing so it roasts crisp rather than steams.
- Save leftover charmoula as a vibrant drizzle for roasted squash or skillet tofu.
- Original home-cooking adaptation inspired by Moroccan; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
