A LITTLE KITCHEN KNOW-HOW
Absorptive Spice-Steamed Rice Pilaf Method
Toasting rice grains in spiced oil before steaming in tightly sealed broth for fluffy, distinct, and deeply flavored grains.
Notes from the kitchen
- Rinsing basmati rice until water runs clear removes excess starch and keeps grains distinct.
- Crushing cardamom pods slightly exposes the fragrant seeds inside.
- Original home-cooking adaptation inspired by Somali; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
